Golden Glow

A luminous non-alcoholic cocktail that embodies Leo's radiant energy through tropical fruits and warming ginger. The honey adds natural sweetness while the golden color captures the essence of Leo's ruling sun.

Ingredients

  • 2 oz fresh pineapple juice

  • 1 oz fresh lime juice

  • 0.75 oz honey simple syrup*

  • 0.25 oz fresh ginger syrup*

  • 3 oz club soda

  • Pineapple wedge and crystallized ginger for garnish

Honey Simple Syrup:

  • 1 cup honey

  • 0.5 cup warm water

Ginger Simple Syrup:

  • 1 cup sugar

  • 1 cup water

  • 4 oz fresh ginger, sliced

Instructions

  1. Prepare syrups: For honey syrup, whisk honey with warm water until dissolved. For ginger syrup, simmer sugar, water, and ginger for 15 minutes, then strain.

  2. In a cocktail shaker, combine pineapple juice, lime juice, honey syrup, and ginger syrup.

  3. Add ice and shake well for 10 seconds.

  4. Strain into a highball glass filled with fresh ice.

  5. Top with club soda.

  6. Garnish with a pineapple wedge and crystallized ginger.

Notes

  • Use fresh pineapple juice for best results

  • Ginger syrup intensity can be adjusted to taste

  • Both syrups keep refrigerated for up to 3 weeks

  • Serve immediately for best carbonation
