Lunar Eclipse

A captivating rum cocktail that mirrors the celestial drama of a lunar eclipse through layered colors and evolving flavors. Dark rum provides rich depth while peach liqueur adds summer sweetness, balanced by bright lemon and blackberry's tartness. Ingredients

  • 1.5 oz dark rum

  • 1 oz peach liqueur

  • 0.75 oz fresh lemon juice

  • 0.5 oz blackberry syrup*

  • Splash of club soda

  • Fresh peach slice for garnish

*Blackberry Syrup:

  • 1 cup fresh blackberries

  • 1 cup sugar

  • 1 cup water

  • 1 tablespoon lemon juice

Instructions

  1. Prepare blackberry syrup: Combine blackberries, sugar, and water in a saucepan. Simmer for 10 minutes, mashing berries gently. Strain through fine mesh, add lemon juice, and bottle.

  2. In a shaker, combine dark rum, peach liqueur, lemon juice, and blackberry syrup.

  3. Add ice and shake vigorously for 10-15 seconds.

  4. Strain into a rocks glass filled with fresh ice.

  5. Top with a splash of club soda.

  6. Garnish with a fresh peach slice.

Notes

  • Blackberry syrup keeps refrigerated for up to 2 weeks

  • The drink's color will evolve as ice melts and ingredients blend

  • For extra visual drama, float additional blackberry syrup on top

  • Best served in a rocks glass over fresh ice
