Apple Ancestral

A sophisticated spirit-forward cocktail that honors the ancient art of apple preservation through calvados and vinegar. The sage syrup adds herbal complexity while walnut bitters provide earthy depth, creating a drink that embodies Virgo's connection to traditional harvest wisdom and seasonal preparation.

Ingredients

  • 2 oz calvados

  • 1 oz apple cider vinegar

  • 0.75 oz sage syrup*

  • 0.75 oz fresh lemon juice

  • 2 dashes walnut bitters

  • Dehydrated apple wheel for garnish

  • Fresh sage sprig

*Sage Syrup:

  • 1 cup sugar

  • 1 cup water

  • 1/4 cup fresh sage leaves

Instructions

  1. Prepare sage syrup: Combine sugar and water in saucepan, bring to boil. Add sage leaves, simmer 5 minutes. Let cool completely, strain, and bottle.

  2. In a mixing glass, combine calvados, apple cider vinegar, sage syrup, lemon juice, and walnut bitters.

  3. Add ice and stir for 25-30 seconds until well-chilled.

  4. Strain over a large ice cube in a double rocks glass.

  5. Garnish with dehydrated apple wheel and fresh sage sprig.

  6. Express sage oils over the drink before serving.

  • Sage syrup keeps refrigerated for up to 2 weeks
