Siren’s Secret

A complex, spirit-free cocktail that captures the mysterious depths of the ocean. This sophisticated non-alcoholic drink features ruby red grapefruit brightened with bay leaf and black peppercorn, creating layers of flavor that evolve as you sip. The addition of tonic water adds effervescence while a touch of saline enhances all the flavors.

Ingredients

  • 2 oz fresh ruby red grapefruit juice

  • 0.75 oz bay leaf and black peppercorn syrup*

  • 1 oz Seedlip Spice 94

  • 2 oz premium tonic water

  • 2 drops saline solution (or pinch of salt)

  • Fresh bay leaf for garnish

  • Grapefruit oil (expressed from peel)

*Bay Leaf & Black Peppercorn Syrup:

  • 1 cup water

  • 1 cup sugar

  • 4 fresh bay leaves

  • 1 tablespoon whole black peppercorns

Instructions

  1. Make the syrup ahead of time: Combine water and sugar in a saucepan. Add bay leaves and peppercorns. Bring to a boil, reduce heat, and simmer for 10 minutes. Let cool completely, strain, and store in refrigerator.

  2. To make the cocktail: In a shaker, combine grapefruit juice, bay leaf and black peppercorn syrup, Seedlip Spice 94, and saline solution.

  3. Add ice and shake vigorously for 10-12 seconds.

  4. Double strain into a chilled coupe glass.

  5. Slowly top with tonic water.

  6. Express grapefruit oil over the surface and garnish with a fresh bay leaf.

Notes

  • Syrup will keep refrigerated for up to 2 weeks

  • For a spicier version, crack the peppercorns before adding to syrup

  • Can substitute Seedlip Spice 94 with other non-alcoholic spirit alternatives

  • Best served in a coupe glass but can be served in a rocks glass over ice
