Ingredients

  • 1½ oz London dry gin

  • ¾ oz Campari

  • ½ oz sweet vermouth

  • ½ oz fresh rhubarb syrup*

  • ¼ oz lemon juice

  • Rhubarb ribbon and lemon twist for garnish

*Rhubarb Syrup:

  • 2 cups chopped fresh rhubarb

  • 1 cup sugar

  • 1 cup water

  • Pinch of salt

Instructions

  1. Prepare rhubarb syrup: Combine chopped rhubarb, sugar, water, and salt in a saucepan. Bring to a simmer over medium heat, stirring to dissolve sugar. Reduce heat and simmer gently for 15 minutes until rhubarb breaks down. Remove from heat and let cool completely. Strain through a fine-mesh strainer, pressing on solids to extract all liquid. Bottle and refrigerate.

  2. Chill a coupe glass.

  3. In a shaker, combine gin, Campari, sweet vermouth, rhubarb syrup, and lemon juice.

  4. Add ice and shake until well-chilled, about 15 seconds.

  5. Strain into the chilled coupe glass.

  6. Using a vegetable peeler, create a thin ribbon of fresh rhubarb. Twist it into a spiral and place on the rim of the glass alongside a twisted lemon peel.

Notes

  • The rhubarb syrup will keep refrigerated for up to 2 weeks

  • The lemon juice brightens the drink but can be reduced to ⅛ oz for a more spirit-forward experience

  • Using a high-quality London dry gin with prominent juniper notes creates the best flavor profile

  • The natural tartness of rhubarb balances perfectly with Campari's bitterness

  • Best served in a coupe glass without ice
