Ingredients

  • 1 oz pomegranate juice (100% pure, unsweetened)

  • 1 oz fresh orange juice

  • ½ oz lemon juice

  • ½ oz tarragon syrup*

  • 2-3 dashes non-alcoholic aromatic bitters

  • Soda water

  • Orange wheel and tarragon sprig for garnish

*Tarragon Syrup:

  • 1 cup sugar

  • 1 cup water

  • ¼ cup fresh tarragon leaves and tender stems

Instructions

  1. Prepare tarragon syrup: Combine sugar and water in a saucepan over medium heat, stirring until sugar dissolves. Add tarragon, bring to a gentle simmer, then remove from heat. Cover and let steep for 30 minutes. Strain through a fine-mesh strainer, cool completely, and bottle.

  2. Fill a rocks glass with ice.

  3. In a shaker, combine pomegranate juice, orange juice, lemon juice, tarragon syrup, and non-alcoholic bitters.

  4. Add ice and shake vigorously for 15 seconds until well-chilled.

  5. Strain into the prepared rocks glass.

  6. Top with a splash of soda water.

  7. Garnish with an orange wheel and a fresh sprig of tarragon, lightly slapped to release its aromatic oils.

Notes

  • The tarragon syrup will keep refrigerated for up to 2 weeks

  • Using fresh-squeezed juices significantly enhances the flavor profile

  • The tarragon provides an unexpected anise-like note that elevates this beyond ordinary fruit punch

  • The non-alcoholic bitters add complexity that mimics the depth of a spirit-based cocktail

  • Best served in a rocks glass with plenty of ice
