Ingredients
2 oz gin (botanical-forward recommended)
1 oz elderflower liqueur (St-Germain)
0.75 oz fresh lemon juice
1 egg white
3 oz premium tonic water
Fresh lemon verbena sprig

Instructions
In a cocktail shaker, combine gin, elderflower liqueur, fresh lemon juice, and egg white.
Dry shake (without ice) vigorously for 15 seconds to emulsify the egg white.
Add ice and wet shake for another 15 seconds.
Double strain into a highball glass filled with fresh ice.
Top slowly with premium tonic water, pouring over a bar spoon to preserve the foam layer.
Gently place lemon verbena sprig and edible flowers on the foam surface.
