A sophisticated, spirit-forward cocktail that transforms the classic Old Fashioned through the innovative use of a rhubarb-strawberry shrub. Ingredients

  • 1½ oz bourbon (preferably 100 proof)

  • ¾ oz rhubarb-strawberry shrub*

  • ½ oz Cointreau

  • 2 dashes Angostura bitters

  • Strawberry slice and rhubarb ribbon for garnish

  • Large clear ice cube

*Rhubarb-Strawberry Shrub:

  • 1 cup diced fresh rhubarb

  • 1 cup hulled and sliced strawberries

  • 1 cup granulated sugar

  • 1 cup apple cider vinegar

  • 1 tsp black peppercorns (optional, for added complexity)

Instructions

  1. Prepare rhubarb-strawberry shrub: In a non-reactive container, combine rhubarb, strawberries, and sugar. Mix well to coat the fruit with sugar. Cover and let sit at room temperature for 24 hours, stirring occasionally. Add apple cider vinegar and black peppercorns (if using). Cover and refrigerate for 7 days, shaking daily. Strain through a fine-mesh strainer, pressing on solids to extract all liquid. Bottle and refrigerate.

  2. Place a large clear ice cube in a rocks glass.

  3. In a mixing glass, combine bourbon, rhubarb-strawberry shrub, Cointreau, and Angostura bitters.

  4. Add ice and stir until well-chilled, about 30 seconds.

  5. Strain into the prepared rocks glass over the large ice cube.

  6. Using a vegetable peeler, create a thin ribbon of fresh rhubarb. Twist it decoratively and place it in the glass alongside a fresh strawberry slice.

Notes

  • The shrub will keep refrigerated for up to 3 months and develops more complexity over time

  • The higher proof bourbon stands up better to the complex flavors of the shrub

  • The optional black peppercorns in the shrub add a subtle spice note that complements Aries' fire element

  • The acidity from the shrub eliminates the need for citrus juice, creating a unique hybrid between spirit-forward and sour cocktails
