A nostalgic rum cocktail that evokes summer memories through the sweet perfume of fresh apricots and warming vanilla. White rum provides a clean base while apricot puree adds seasonal richness and beautiful golden color. Vanilla syrup contributes comforting sweetness, and lime juice ensures perfect balance.

Ingredients

  • 2 oz white rum

  • 1 oz fresh apricot puree*

  • 0.75 oz fresh lime juice

  • 0.5 oz vanilla simple syrup**

  • Fresh apricot slice for garnish

*Fresh Apricot Puree:

  • 4-5 ripe apricots, pitted

  • 1 tablespoon water

*Vanilla Simple Syrup:

  • 1 cup sugar

  • 1 cup water

  • 1 vanilla bean, split and scraped

Instructions

  1. Prepare apricot puree: Blend apricots with water until smooth. Strain if desired for smoother texture.

  2. Prepare vanilla syrup: Combine sugar, water, and vanilla bean in a saucepan. Simmer until sugar dissolves. Let cool, strain, and bottle.

  3. In a shaker, combine rum, apricot puree, lime juice, and vanilla syrup.

  4. Add ice and shake vigorously for 10-15 seconds.

  5. Double strain into a chilled coupe glass.

  6. Garnish with a fresh apricot slice.

Notes

  • Use very ripe apricots for best flavor and natural sweetness

  • Apricot puree keeps refrigerated for up to 2 days

  • Vanilla syrup keeps refrigerated for up to 3 weeks

  • The drink's color will vary based on apricot ripeness

  • Best served in a chilled coupe glass
