A vibrant herbaceous cocktail that balances the botanical complexity of gin with the earthy sweetness of rosemary honey and the bright tartness of green strawberries. Ingredients

  • 2 oz gin (preferably one with pronounced botanical notes)

  • ¾ oz rosemary-infused honey syrup

  • ¾ oz fresh lemon juice

  • 3 green strawberries, muddled

  • Fresh thyme sprig for garnish

  • Large clear ice cube

Rosemary-Infused Honey Syrup:

  • 1 cup local honey

  • ½ cup water

  • 4 large sprigs fresh rosemary

Instructions

  1. Prepare rosemary-infused honey syrup: Combine honey and water in a saucepan. Add rosemary sprigs. Heat until honey dissolves, stirring occasionally. Remove from heat and let steep for 30 minutes. Strain and bottle.

  2. In a cocktail shaker, gently muddle the green strawberries.

  3. Add gin, rosemary-infused honey syrup, and fresh lemon juice.

  4. Add ice and shake vigorously for 15 seconds until well-chilled.

  5. Double strain into a rocks glass over a large clear ice cube.

  6. Garnish with a fresh thyme sprig, lightly slapped to release oils.

Notes

  • Rosemary-infused honey syrup will keep refrigerated for up to 2 weeks

  • If green strawberries aren't available, use 1 regular strawberry and add ¼ oz white balsamic vinegar

  • For a less sweet version, reduce honey syrup to ½ oz

  • Best served in a rocks glass with a large clear ice cube
