Ingredients

  • 2 oz CleanCo Clean G (non-alcoholic gin alternative)

  • ¾ oz rosemary cordial

  • ¾ oz fresh lime juice

  • 2 dashes non-alcoholic aromatic bitters

  • Rosemary sprig for garnish

  • Large clear ice cube

Rosemary Cordial:

  • 2 cups water

  • 2 cups granulated sugar

  • Zest of 2 limes

  • 6 large sprigs fresh rosemary

  • 1 tsp citric acid

Instructions

  1. Prepare rosemary cordial: Combine water and sugar in a saucepan. Add lime zest and rosemary sprigs. Bring to a simmer and cook for 5 minutes. Remove from heat and let steep for 30 minutes. Strain, add citric acid, and bottle.

  2. In a mixing glass, combine CleanCo Clean G, rosemary cordial, fresh lime juice, and non-alcoholic aromatic bitters.

  3. Add ice and stir for 30 seconds until well-chilled.

  4. Strain into a chilled coupe or rocks glass over a large clear ice cube.

  5. Express oils from a rosemary sprig by lightly slapping it, then use as garnish.

Notes

  • Rosemary cordial will keep refrigerated for up to 3 weeks

  • For a less sweet version, reduce cordial to ½ oz and add more lime juice

  • The citric acid in the cordial is essential for proper preservation and balance

  • Best served in a rocks glass with a large clear ice cube or a chilled coupe

  • Pairs well with: Olive tapenade, roasted nuts, or as a mindful pre-dinner drink
