A transformative cocktail that captures the magic of the sea. Butterfly pea flower-infused rum creates a stunning blue base that dramatically shifts colors when citrus is added. Fresh clementine and key lime provide bright top notes, while coconut water adds subtle tropical depth. A sea salt and vanilla mist adds complexity and enhances the drink's ethereal nature.
Ingredients
2 oz butterfly pea flower-infused white rum*
1 oz fresh clementine juice
0.5 oz key lime-infused simple syrup**
1 oz coconut water
Sea salt and vanilla mist***
Clementine zest for garnish
Crushed ice
*Butterfly Pea Flower-Infused Rum:
1 bottle white rum
2 tablespoons dried butterfly pea flowers
Infuse for 1 hour, strain and bottle
**Key Lime Simple Syrup:
1 cup sugar
1 cup water
Zest of 4 key limes
Heat until dissolved, steep 20 minutes, strain
***Sea Salt Vanilla Mist:
1 oz high-proof neutral spirit
1 teaspoon sea salt
Seeds from 1/2 vanilla bean
Combine in a small spray bottle
Instructions
Fill a double rocks glass with crushed ice.
Pour butterfly pea flower-infused rum over the ice (the drink will be a deep blue).
In a separate shaker, combine clementine juice, key lime syrup, and coconut water.
Gently pour the citrus mixture over the rum (watch the color transform from blue to purple to pink).
Spray sea salt vanilla mist over the surface.
Express clementine zest over the drink and use as garnish.
Notes
Infused rum will keep indefinitely
Lime syrup will keep refrigerated for up to 2 weeks
For a stronger color change, add citrus mixture slowly
Best served in a clear glass to appreciate the color transformation
Can garnish with dried butterfly pea flowers for extra visual appeal
