Ingredients
1½ oz fresh watermelon juice
¾ oz pink grapefruit juice
½ oz lime juice
¼ oz ginger-chili syrup*
Soda water
Watermelon wedge and lime wheel for garnish
Optional: pinch of Tajin seasoning for garnish
*Ginger-Chili Syrup:
1 cup sugar
1 cup water
3 tbsp fresh ginger, peeled and thinly sliced
½ red chili (such as Fresno), sliced (seeds optional depending on desired heat)
Instructions
Prepare ginger-chili syrup: Combine sugar, water, sliced ginger, and chili in a saucepan. Bring to a simmer over medium heat, stirring to dissolve sugar. Reduce heat and simmer gently for 10 minutes. Remove from heat, cover, and let steep for 30 minutes. Strain through a fine-mesh strainer, cool completely, and bottle.
Juice fresh watermelon by blending chunks and straining through a fine-mesh sieve.
Fill a highball glass with ice.
In a shaker, combine watermelon juice, grapefruit juice, lime juice, and ginger-chili syrup.
Add ice and shake until well-chilled, about 15 seconds.
Strain into the prepared highball glass.
Top with soda water.
Garnish with a watermelon wedge and lime wheel. For an extra dimension, dust the watermelon with a tiny pinch of Tajin seasoning.
Notes
The ginger-chili syrup will keep refrigerated for up to 2 weeks
The heat level can be adjusted by varying the amount of chili and whether seeds are included
