Sage Counsel

A spirituous, contemplative cocktail that showcases the herbaceous wisdom of sage against a backdrop of quality gin and dry vermouth. This minimal yet intentional combination honors Taurus's appreciation for quality ingredients and patient craftsmanship. The sage provides subtle earthiness without overwhelming the palate, allowing each element to be fully appreciated.

Ingredients

  • 2½ oz London dry gin

  • ½ oz dry vermouth

  • ¼ oz sage syrup

  • 2 dashes orange bitters

  • Fresh sage leaf for garnish

  • Large clear ice cube

Sage Syrup:

  • 1 cup granulated sugar

  • 1 cup water

  • 1 bunch fresh sage leaves (approximately 20 leaves)

Instructions

  1. Prepare sage syrup: Combine sugar and water in a saucepan. Bring to a simmer, stirring until sugar dissolves. Add sage leaves and remove from heat. Let steep for 30 minutes. Strain and bottle.

  2. In a mixing glass, combine gin, dry vermouth, sage syrup, and orange bitters.

  3. Add ice and stir for 45 seconds until very well-chilled and properly diluted.

  4. Strain into a chilled nick and nora glass or small coupe.

  5. Express oils from a sage leaf by gently slapping it, then float as garnish.

Notes

  • Sage syrup will keep refrigerated for up to 2 weeks

  • For a more pronounced sage flavor, gently muddle a fresh sage leaf in the mixing glass before adding other ingredients

  • The minimal ingredients showcase quality - use the best gin and vermouth you can afford

  • Best served in a chilled nick and nora glass or small coupe

  • Pairs well with: Marcona almonds, aged parmesan, or as a contemplative pre-dinner cocktail
