2½ oz London dry gin
½ oz dry vermouth
¼ oz sage syrup
2 dashes orange bitters
Fresh sage leaf for garnish
Large clear ice cube
Sage Syrup:
1 cup granulated sugar
1 cup water
1 bunch fresh sage leaves (approximately 20 leaves)
Instructions
Prepare sage syrup: Combine sugar and water in a saucepan. Bring to a simmer, stirring until sugar dissolves. Add sage leaves and remove from heat. Let steep for 30 minutes. Strain and bottle.
In a mixing glass, combine gin, dry vermouth, sage syrup, and orange bitters.
Add ice and stir for 45 seconds until very well-chilled and properly diluted.
Strain into a chilled nick and nora glass or small coupe.
Express oils from a sage leaf by gently slapping it, then float as garnish.
Notes
Sage syrup will keep refrigerated for up to 2 weeks
For a more pronounced sage flavor, gently muddle a fresh sage leaf in the mixing glass before adding other ingredients
