Berry Bouquet

A vibrant, fruit-forward non-alcoholic cocktail that celebrates the early berries of Taurus season. The complex base of CleanCo Clean R provides depth, while the fresh strawberry-basil purée captures spring's emergence. The presentation as a miniature farmer's market bouquet honors Taurus's connection to agriculture and appreciation for nature's beauty, while keeping the flavor bright and approachable.

Ingredients

  • 2 oz CleanCo Clean R (non-alcoholic rum alternative)

  • ¾ oz strawberry and basil purée

  • ½ oz fresh lime juice

  • ¼ oz simple syrup

  • Fresh berries and herb bouquet on a wooden pick for garnish

  • Crushed ice

Strawberry and Basil Purée:

  • 2 cups fresh strawberries, hulled and quartered

  • 1 cup fresh basil leaves, loosely packed

  • ½ cup simple syrup

  • Pinch of salt

Instructions

  1. Prepare strawberry and basil purée: Combine strawberries, basil, simple syrup, and salt in a blender. Blend until smooth. Strain through a fine-mesh strainer to remove seeds and herb particles. Bottle and refrigerate.

  2. In a cocktail shaker, combine CleanCo Clean R, strawberry and basil purée, fresh lime juice, and simple syrup.

  3. Add ice and shake vigorously for 15 seconds until well-chilled.

  4. Fill a collins glass halfway with crushed ice.

  5. Double strain the cocktail into the glass.

  6. Top with more crushed ice to create a mound.

  7. Garnish with a small "bouquet" of fresh berries and herbs (strawberry, mint, basil, thyme) arranged on a wooden pick.

Notes

  • Strawberry and basil purée will keep refrigerated for up to 3 days

  • For a spicier version, add a few cracks of black pepper to the shaker

  • The crushed ice helps dilute and chill this fruit-forward cocktail properly

  • To create the bouquet garnish, use a cocktail pick to secure small berries and herb sprigs

  • Best served in a collins glass with crushed ice
